Skinny Guacamole

This 'skinny' guacamole recipe is super easy to knock up of a Saturday evening - plus it forgoes the usual calorie loaded crème fraiche or yoghurt and subsitutes half the avocado with grated courgette (we're a bit obssessed with courgette at the moment) so it's uber healthy. Perfect served with crunchy veg and wholemeal pitta.
Our notes: We got the idea of replacing some of the avocado with courgette in order to reduce the calorie content of the dip from eatingwell.com who suggested steaming the courgette; we chose to grate the courgette which worked just as well. It’s a pretty flexible recipe – you could also add some chopped tomatoes, and leave out the chilli if you don’t fancy any heat. If you don’t have spring onions, a usual white or red onion will do the trick, just taste as you go along as they are stronger in flavour.
Ingredients:
1 avocado
Half a courgette
1 red chilli
1 clove of garlic
2 spring onions
1 lime
Salt to taste
Glug of good quality olive oil if required
How to make:
- Place the rest of the ingredients in a bowl and mash together. Add a glug of olive oil if required. Season as required.
