- We use prime beef fillet which we wrap in a classic mushroom duxelles, this is made using chestnut & cup mushrooms, shallots, garlic, thyme, rosemary, sherry, mustard, porcini mushroom stock and white wine, this is cooked down and intensified for its richness.
- Encased in British native breed Breasola (air-dried beef) before being fully wrapped in a puff pastry lattice and egg washed to ensure it goes golden brown & crisp when cooked.
What to Serve With Beef Wellington:
- A simple red wine jus perfectly complements a beef wellington.
- If you’re thinking about side dishes, we suggest Peas & Leeks, Braised Red Cabbage, Dauphinoise Potatoes or Creamy Mash.
- Something fancy, thyme-roasted heritage carrots, truffle infused fondant potatoes, fine green beans with shallots and a classic red wine jus.
Wine Matching: A good wellington needs a good wine! We suggest a red Bordeaux or a good Chilean Merlot.
