How We Make It At Our Kitchen
- A Thai Panang curry is traditionally sweet and mild, with a base of coconut milk to give its creamy texture. For our version of a Panang curry, our Chefs firstly marinade fresh chicken breast in lemongrass puree, ginger, ground coriander, ground cumin and lime juice and allow the flavours to develop for about 2 hours, for roasting the chicken until it is juicy and tender.
- For the sauce, our Chefs start by lightly frying garlic until golden brown, before adding lemongrass, ginger and onion which they cook slowly to allow these key Thai flavours to develop. They then add Panang paste to the pan, which they cook out briefly to allow the aromatic flavours to be released
- They add coconut milk along with creamed coconut to give the dish its distinctive coconutty sweetness, along with chopped tomatoes and tomato puree. The dish is seasoned with Thai fish sauce for a salty note along with tamarind paste, and cook this for around 30 mins. Lastly, our Chefs stir lime leaf and coriander for a fresh note to the dish
