  • Kofta – which are a type of meatball – is not always associated with curries in the UK, but they are a classic ingredient in India
  • This is quite a mild curry, so a real crowd-pleaser
  • We make the meatballs from scratch, even mincing the lamb in our kitchen from prime cuts

Try it with:

  • Traditionally, kofta are eaten with Indian breads, so don’t forget to add a naan as well as rice.
  • Lamb loves sweetness, so don’t forget the mango chutney.
  • Just before serving, garnish with fresh coriander.

How We Make It At Our Kitchen

  • To make the koftas, we mince lamb leg and combining with shallots, ginger, creamed coconut, tomato, garlic and spices.
  • The sauce starts with onion, garlic and ginger, to which we add a mix of spices, some roast chicken stock, tomatoes, coconut milk and red lentils.
  • When the lentils are perfectly cooked and the sauce is wonderfully fragrant, we stir through spinach and coriander.

AT COOK WE USE THE SAME INGREDIENTS YOU WOULD USE AT HOME.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).

Lamb (30%), Chopped Tomatoes (22%) (Tomato Juice, Acidity Regulator: Citric Acid), Water, Coconut Milk (11%) (Coconut Extract, Water), Red Lentils (7%) [Wheat Gluten], Onions, Ginger Puree (3%), Garlic, Spinach (2%), Tomato Puree (2%), Shallots, Salt, Roast Chicken Bouillon (Maltodextrin, Salt, Natural Flavouring, Chicken Fat, Sugar, Lemon Juice Concentrate, Dried Onion Powder), Rapeseed Oil, Coriander Leaves, Creamed Coconut Squares (Desiccated Coconut, Preservative: Sulphur Dioxide), Cumin Seeds, Ground Garam Masala (Coriander, Cassia, Ginger, Cloves), Mustard Seeds, Black Pepper, Ground Coriander.

Cooking/Serving Instructions

Microwave:

Remove sleeve, pierce film lid. Place on a microwaveable plate. Cook on full power.

Allow to stand for 2 mins. Ensure food is piping hot before serving.

Oven:

Preheat oven. Remove sleeve, pierce film. Place on a baking tray in the centre of the oven.

Oven Settings

Fan 170°C, Electric 190°C, Gas Mark 5.
45 mins
Allow to stand for 2 mins. Ensure food is piping hot before serving.

Defrost Instructions:

Should this product defrost keep refrigerated and use within 48 hours, follow the oven guidelines but cook for 25 minutes.

Extra Warnings:

Steam may be released when removing film lid. Although every care has been taken to remove all bones, some may remain.
