Try it with:
- Delicious with pilau or basmati rice and a naan bread on the side.
- Garnish with coriander and a slice of lime.
- Go all-in on the mango by adding some of the classic Indian chutney.
How We Make It At Our Kitchen
- After frying onion, ginger, garlic and lemongrass with curry leaves until fragrant, we add a classic Indian spice mix, stock, creamed coconut and coconut milk. The sauce is finished with tamari, lime juice, spinach and coriander.
- Sustainably-sourced king prawns are blanched, so they’re perfect when you cook this curry at home.
- Finally, it’s topped with a mix of juicy mango, fresh red chilli, nigella seeds and coriander.
