Cooking and Ingredients
The three beans that give this salad its colour and its name are haricot, kidney and soya beans. The oven roasted vegetables include slow-roasted tomatoes cooked with oregano and garlic, courgettes, red onions and red peppers. Whole black olives are added at the end giving that mediterranean feel. The dressing is a light vinaigrette made with white wine vinegar, lemon, garlic, parsley and basil.
Serving Suggestion
Garnish with some torn basil leaves or rocket.
Crumble some feta cheese or goats cheese on top to turn this salad into a meal in itself.
