That signature sauce is made with green Thai curry paste, coconut milk, fish sauce, lemongrass, tamarind and ginger, and finished with blended green peppers to give it a vibrant green colour. Then we add chicken breast and soaked rice noodles, before finishing it off with spring onions, sweetheart cabbage, roasted courgettes and julienne carrot.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).
