Vegetarian meals

Whether you’re looking for vegetarian meals, you’re a flexitarian, or you just fancy a bit more veg in your diet, we’ve got loads of vegetarian summer food for you:

Light vegetarian summer meals: Our Great Taste Award-winning Tomato, Basil & Mozzarella Risotto and our Portobello Mushroom Risotto are both great choices. You don’t need anything with either, but a simple side salad of rocket works well, or stir through 80g of fresh spinach leaves between cooking and serving to include one of your five a day. The perfect summer family meals for those with smaller appetites.

Vegetarian summer dishes for lunch: A tart and salad make for a lovely lunch. Our award-winning Butternut Squash, Spinach & Feta Tarts and our Roasted Mediterranean Vegetable Tarts both go well with a fresh Greek salad. Or just cut them up into quarters and enjoy on their own as nibbles with drinks, or as summer starters for a bigger occasion. If you’re after some easy summer vegetarian meals to serve up as they are, then these are your best bet.

Vegetarian summer dinner ideas: If it’s dinner in the garden, lasagne is the perfect summer vegetarian meal. Serve simply with a salad and a Garlic Ciabatta or two and everyone’s happy.
