How we make it

  • We have butterflied part of the breast, added a parsley and lemon centre (not stuffing) and shaped it into a cushion.
  • We have then topped the turkey with the pork & apricot stuffing from Speldhurst butchers, the same as in our other turkeys, and added dried cranberries to the mix. 
  • The whole turkey is then wrapped in streaky bacon and finished with a lemon slice and bay leaf.
