  • A magnificent centrepiece that, even though it cooks from frozen, will have some lovely crackling.
  • The pork is higher welfare and comes from Dingley Dell, an RSPCA Ambassador Farm.
  • Could be served as an alternative to turkey on Christmas Day, or even alongside one if you’re hosting a small army!

Try it With:

  • Our Christmas sides work really well with this – especially the Roast Potatoes, Parsnips, and Carrots. Oh, and don’t forget the apple sauce!
  • For a more informal but still very special meal, serve with fried savoy cabbage, celeriac chips and a class of decent cider.
  • While it’s not essential, some gravy is a nice addition. Try our seasonal Turkey Gravy, and add a sprig of thyme.

Top Tip for the Crackling:

  • If the crackling hasn't quite crackled when the timer pings, you can put it back in the oven for a few more minutes without any detrimental effect to the meat.

How We Make It At Our Kitchen

  • For the stuffing, we soak sultanas in apple juice, finely slice leeks and cook them slowly in butter with garlic, thyme, sage and diced Bramley apples.
  • Then We add a splash of brandy, some English mustard, the sultanas and finally fresh bread crumbs to bind it all together.
  • Dingley Dell farm supply us with pork loins that are butterflied by our chefs, stuffed and tied. They sprinkle them with sea salt and sage to give them a really golden, crunchy crackling when cooked.

Cooking/Serving Instructions

OVEN COOK FROM FROZEN

Oven:

Preheat oven. Remove from all packaging and place directly onto a baking tray. Cook in the top of the oven for 85 mins, cover with foil and then cook for a further 20 mins. 5 mins before the end of cooking, remove the foil to crisp the crackling. Crackling not Crackled? If the crackling isn't quite crispy enough, give it another 5 mins at the same temperature- it won't affect the meat.

Oven Settings

Fan 200°C, Electric 220°C, Gas Mark 7.

Allow to rest for 5 mins before serving. Ensure piping hot.

Defrost Instructions:

Should this product defrost, keep refrigerated and eat within 48 hours. Follow the oven guidelines but cook for 40 mins, cover with foil, then a further 30 mins (removing the foil 5 mins before the end!)
