Crunchy Peanut Salad

Crunchy Peanut Salad
(serves 4 as a side)
This salad will add some crunch to your Thai meal, and is great served with the main courses or some of the Thai starters on the COOK website. It only takes minutes to make so give it a go.
Ingredients:
125g Beansprouts
½ Cucumber, sliced into batons
3 Spring Onions, finely shredded
1 Red Birdseye chilli, deseeded and sliced thinly into strips
Small handful of fresh Mint leaves
Small handful of fresh Basil leaves 1
tbsp. Fish Sauce
1 tbsp. Lime Juice
1 tsp. Palm or Demerara Sugar
50g Unsalted Roasted Peanuts, roughly chopped
Preparation:
Mix the fish sauce, lime juice and sugar to form a simple dressing.
Just before serving, lightly shred the herbs then mix through the vegetables along with the dressing. Top with the lightly crushed peanuts and serve.
