How We Make It

This sweet, aromatic dish is flavoured with a mixture of authentic Moroccan spices. The beef itself is braised gently for 3 hours until it’s so deliciously tender it melts in the mouth.

To make the sauce, our chefs create an aromatic stock with cinnamon sticks, simmered for around 45 mins to release all of their flavour. They then sweat onion and garlic in olive oil until soft and sweet, before adding our own spice mix – a combination of cumin, raz el hanout, cinnamon, ginger and paprika – which is simmered with the onions in chopped tomatoes to allow the spices to cook out thoroughly. Next, dried dates soaked in apple juice, tomato puree, honey, beef stock, vegetable stock and the cinnamon stock mix add layer upon layer of flavour.

Then they stir through some natural yoghurt (an authentic touch) and the dish is finished off with chickpeas, coriander and flaked almonds to give it extra texture.

Great served with our Minted Couscous. You could also try swirling some extra yoghurt through and adding freshly chopped coriander.

Cooking Instructions

At our kitchen, we prepare food by hand using the same ingredients and techniques you would at home. We then freeze our meals at -35°C so it tastes freshly made when you cook it at home (no nasty additives or preservatives required). Most of our food can be heated from frozen (sometimes in minutes in your microwave). Check the instructions below.

Fan 170°C, Electric 190°C, Gas Mark 5.

Stir well before serving.

Microwave:

Remove sleeve and pierce film lid. Cook on full power.

Stir well before serving.
