Seasonal twist on a traditionally summer recipe bursting with blackberries, apple, raspberries, cranberries & blueberries enriched with cinnamon.

- This is much better if it has been defrosted overnight in the fridge. Don’t try and turn it out until just before you serve it.
- A good dollop of clotted cream, crème fraiche or ice cream on the side would be perfect.

How We Make It At Our Kitchen
To create this festive version of our classic Summer Pudding, we line a pudding bowl with slices of bread soaked in a coulis of redcurrants and blackcurrants. We then fill the bowl with blackberries, cranberries, apple, raspberries and blueberries which have been mixed together with soft brown sugar, cinnamon and more of the redcurrant and blackcurrant coulis.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).

DEFROST TO SERVE
Defrost Instructions:
FOR BEST RESULTS DEFROST AT ROOM TEMPERATURE. 1) Defrost for 8-9 hours at room temperature or for 15-16 hours in the fridge. 2) Once it has thawed, take off the lid and place a serving plate over the pudding. Turn the pudding upside down and lift off the bowl. You may need to very carefully run a knife around the edge to release it. 3) This pudding will benefit from being left for an extra 2-3 hours in the bowl once defrosted - the fruit becomes even juicier. Serve with very thick cream. 4) In the unlikely event of there being any leftovers, keep in the fridge and eat within 48 hours.
