Marinated chicken breast pieces in a white wine and mustard sauce with caramelised red onions.

- The chicken is marinated for four hours so it’s full of flavour
- Why two mustards? Wholegrain gives a lovely visual; Dijon gives a bit of a kick
- We caramelise red onions by sweating in red wine vinegar, balsamic vinegar and demerara sugar

- This is a great all-rounder and works as well with rice as it does with Creamy Mash or duchess potatoes
- Some steamed greens on the side are a classic addition
How We Make It At Our Kitchen
- The chicken is marinated for four hours in wholegrain and Dijon mustard before it’s roasted in the oven
- Then the COOK chefs make a velouté sauce using chicken stock and wholegrain and Dijon mustard
- Red onions are sweated with red wine vinegar, balsamic vinegar and demerara sugar for about half an hour until caramelised. When they are added as a garnish, they not only look great, but really cut through the mustard, making this a wonderfully rounded dish
