  • The sauce is made from poaching stock, double cream and a squeeze of lemon juice.
  • The smoked haddock, like all of our fish, comes from approved fishing grounds and is fully traceable back to its source. We only work with suppliers that support the Marine Stewardship Council and that are committed to sustainable fishing.
  • This is a real COOK original … and a go-to supper for Jamie, one of our development chef. “All the flavours just work perfectly together: the saltiness of the fish, the sweetness of the potato and the background heat from the chilli,” he says. “It’s simply delicious.”

Try it With

• It’s a meal in itself really, but you could always add a dressed garden salad or a little crusty bread on the side.

How We Make It

We poach smoked haddock in boiling water to create the stock for the sauce. For the sauce we sauté onions and chopped red chillies in butter then add the poaching stock, double cream and lemon juice to finish. We pan fry back bacon until crispy and oven roast white and sweet potato with thyme. To assemble, we hand place the haddock into the dish with broccoli florets, top with the creamy sauce and roasted potatoes and finished with mature cheddar cheese and paprika.
