  • Cook in the middle of the oven for 65 mins (rare), 70 mins (medium) or 75 mins (well done), for further cooking instructions, see tab below
  • Made with a fillet, the finest cut, of British or Irish beef, aged for 28 days
  • Wrapped in Iberico ham from a third-generation family farm in the Spanish province of Salamanca and aged for close to three years

Try it with:

  • Great with roasted new potatoes or even Dauphinoise, and some fresh steamed veg
  • Make sure your carving knife is nice and sharp, and remember the ends will be done more than the middle, so you can get the perfect slice for every guest
  • Beef used to be a traditional Christmas Day lunch, so if you’re foregoing the turkey this year, this makes for a spectacular alternative

How We Make It At Our Kitchen

  • Our chefs dress seared beef fillets with a puree made from caramelised whole shallots, horseradish sauce and black pepper
  • Then the fillets are wrapped by hand in Spanish Iberico ham
  • For the sauce, they sweat shallots before adding cream, a dash of Worcestershire sauce and sherry, before finishing with tarragon

Cooking Instructions

At our kitchen, we prepare food by hand using the same ingredients and techniques you would at home. We then freeze our meals at -35°C so it tastes freshly made when you cook it at home (no nasty additives or preservatives required). Most of our food can be heated from frozen (sometimes in minutes in your microwave). Check the instructions below.

These cooking instructions are only a guide. Your appliance may have a personality of its own (or a different power rating). Please adjust accordingly.

Oven:

Preheat oven. Take the beef fillet out of the freezer, remove all packaging and place onto a baking tray on the silicone paper provided. Cook in the middle of the oven for 65 mins (rare), 70 mins (medium) or 75 mins (well done).

Oven Settings

Fan 170°C, Electric 190°C, Gas Mark 5.
65-75 mins

Microwave:

SAUCE ONLY: Microwave. While your beef is resting, take the sauce out of the freezer and pierce film lid. Microwave on full power for 2 mins, stir, replace lid and cook for a further 1 minute.

Ensure piping hot and stir well before serving.

Extra Warnings:

Steam may be released when removing sauce film.
