Scottish Salmon with Roasted New Potatoes Gluten Free

Two roasted Scottish salmon fillets on a bed of sautéed leeks and new potatoes, with a zingy crème fraiche, mustard, lemon and dill sauce.

  • Remove the two salmon fillets once cooked, give the potatoes and leeks a good stir. Serve on a plate before placing the fish back on top.
  • For a crispy skin, place the fish under a medium grill for 3-4mins once cooked.
  • We sauté the leeks until sweet before adding to a creamy, mustard and white wine sauce. For a real hit, we use both Dijon and wholegrain mustard.

Try it With:

  • Delicious with a simple rocket salad and a wedge of lemon.
  • Easy to serve with some buttered French beans.
  • Serve with griddled asparagus (when in season) or some Tenderstem broccoli.

AT COOK WE USE THE SAME INGREDIENTS YOU WOULD USE AT HOME.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).

Cooking/Serving Instructions

OVEN COOK FROM FROZEN

Oven:

Preheat oven, remove film and place the foil tray directly onto the middle shelf of the oven.

Oven Settings

Fan 180°C, Electric 200°C, Gas Mark 6.
60 mins
After 60 minutes, remove from the oven. For a crisp skin, you can then place the salmon under a medium grill for 2 to 3 minutes (optional). Be sure to keep a close eye on it! Then leave to rest for 2 minutes. Using a large serving spoon or fish slice, gently lift out the salmon fillets, stir the sauce and potatoes together, and serve.

Defrost Instructions:

Should this product defrost, keep refrigerated and eat within 48 hours. Follow the cooking guidelines and cook for 45 mins.

Extra Warnings:

Although every care has been taken to remove all bones, some may remain.
