Garlic Mussels with a Thermidor Sauce

Greenshell Mussels: Don’t worry, they’re meant to be that colour! This variety of mussels are renowned for the beautiful emerald green edge on their shell. They are sustainably farmed off the coast of New Zealand where their shells can grow anything up to 23 cm in length. The mussels themselves have a sweet and mild flavour with females being apricot coloured and males a cream colour.
How We Make It
We make a garlic crumb by melting butter and adding chopped garlic, lemon juice, parsley and breadcrumbs. This crumb is used to blanket the large Greenshell mussels, ready to be baked at home. The punchy Thermidor sauce is made by sweating onions in butter until they soften and release their sweetness. To the onions we add brandy, lobster stock, English mustard, lemon juice, double cream, tomato puree and paprika. When the sauce is thcik and glossy, we strain it to remove the onions and leave a smooth sauce which is the perfect accomapniment to mussels.
Further Cooking Instructions
Microwave Instructions:
Remove lid and place loosely back on top of the pot and cook on full power. Stir well before serving.
Time for microwave: 1 min>stir>30 secs
Oven Instructions:
Preheat oven. Remove the sauce from the packaging for cooking in microwave later. Remove the mussels from the packaging and place directly onto a baking tray with the crumb side facing up. Cook in the top of the oven.
