Try It With
- Because of its powerful flavours, it’s best with Jasmine rice. You could serve on a banana leaf, if you can find one!
- It’s one for Thai aficionados, so great as part of a Thai buffet alongside some of our crowd-pleasing curries
- For an innovative twist, put it in a wrap with some rice and fresh coriander for a sort of Thai burrito
How We Make It At Our Kitchen
We use a UK and Irish silverside beef – a terrific cut for Thai cooking – which we braise with star aniseed and cinnamon sticks for up to 3 hours. Then we used the braising liquor to make the sauce, with garlic that’s friend until a lovely brown colour, lots of tamarind paste, lime juice, ginger, lemongrass, and fish and soya sauce. Finally we add stir-fried red peppers, carrots, red onions and spring onions.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example some of our curry pastes, which contain Citric Acid).
