Try It With
- For a starter, serve with fresh rocket leaves and, if you like, some fresh dill, shavings of Parmesan, and a wedge of lemon
- For a lunch to remember, serve with some buttered, griddled asparagus tips, crayfish tails and finished with some grated Gruyère cheese
How We Make It
- The team in the Pastry Room at COOK assemble these by making a filo cup, dishing the shredded lobster before adding the souffle mix.
- For the thermidor sauce, we blend English mustard, lobster stock, cayenne pepper and lemon juice.
- The sauce is completed with vintage Cheddar from Barbers, the oldest surviving Cheddar makers in the world.
