Super tender braised leg of lamb is added to a rich gravy, made with onions, celery, thyme, Worcestershire sauce and lamb stock. The addition of redcurrant jelly lends the gravy a hint of sweetness. Braised carrots, leeks and peas are added before the dish is topped with a layer of sliced potatoes brushed with a mix of melted butter and finely chopped rosemary to give them a golden finish.
