Wine Pairings:
Vegan wines are common, which is fantastic, check the back label or the producers website if unsure. For a white wine try a Viognier, which has a lovely creamy texture and has subtle apricot flavours. For a red wine try either a Pinot Noir or a Chianti.
How We Make It At Our Kitchen
- To start, our chefs combine cooked mushrooms, dried apricots, desiccated coconut, nuts, spinach and sage to create the delicious mix for a nut roast.
- Then they roast butternut squash and slowly cook onions with red wine vinegar, sugar and cranberries.
- The roasted butternut squash slices and pink onions are then stacked on top of the nut roast bases.
