How We Make It

  • Inspired by the flavours of our Beef Wellington, we make these from hand-cut British beef, which is slowly braised then shredded.
  • Then we make a duxelle with garlic, butter, onions, Marsala, red wine, chestnut mushrooms, beef glace and thyme.
  • Once reduced, we add a little English mustard, lemon juice and tarragon.
