How We Make It

  • We make our own fig chutney, cooking fig halves with port, brown sugar, rosemary and thyme.
  • To make the soufflé, we start by making a thick roux with flour, butter, cayenne pepper and nutmeg. Egg yolk is added and thoroughly mixed in along with blitzed broccoli and crumbled stilton. The eggs whites are whisked to soft peaks and folded through the thick cheese sauce mix to create a light fluffy mixture.
  • Our pastry team make little filo cases and we fill them with a teaspoon of our fig chutney and top it up with soufflé mix, and sprinkle them with parsley and walnuts.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).

OVEN COOK FROM FROZEN

Oven:

Preheat oven. Remove from all packaging. Place on a baking tray in the top of the oven.

Oven Settings

Fan 170°C, Electric 190°C, Gas Mark 5.

Defrost Instructions:

These soufflés cannot be cooked from defrosted, if you try the soufflé gods will be displeased.
