Tell Me More

  • The use of those delicious speckled lentils in place of minced beef make this a warming, filling and tasty take on a classic British dish.
  • The sauce is tomato based, full of flavour: garlic, thyme, rosemary, mushroom, red wine and horseradish.
  • The buttery mash is made with a mixture of regular and sweet potatoes … and it crisps up when you cook it in the oven at home.

Try it With

• Being too fancy with side dishes sort of misses the point of a hearty pie like this. Just some peas or green beans on the side are a perfect accompaniment.

How We Make It

For this delicious alternative to our meaty Cottage Pie, we’ve used speckled lentils instead of minced beef, which gives it some real body. To make the rich tomato sauce, our chefs slowly sweat onions, garlic, rosemary and thyme to make the base, then add mushrooms, chopped tomatoes, red wine, horseradish and vegetable stock to add a depth of flavour. This is simmered slowly to let all the flavours develop. They then stir in roasted carrots and aubergine, along with the speckled lentils. Finally it’s topped with a buttery potato and sweet potato mash.
