A fresh, Mediterranean-inspired salad of haricot, kidney and soya beans, with oven-roasted vegetables and a light vinaigrette of lemon, garlic, parsley and basil. NB: Whilst we despatch our buffet food frozen, it might arrive partially defrosted and therefore cannot be refrozen. Therefore if you are ordering for a weekend party then it is important that you ensure that the delivery arrives either on a Thursday for a Saturday Party or on a Friday for a Sunday Party so you can keep it in the fridge. Cooking and Ingredients

The three beans that give this salad its colour and its name are haricot, kidney and soya beans. The oven roasted vegetables include slow-roasted tomatoes cooked with oregano and garlic, courgettes, red onions and red peppers. Whole black olives are added at the end giving that mediterranean feel. The dressing is a light vinaigrette made with white wine vinegar, lemon, garlic, parsley and basil.

Serving Suggestion

Garnish with some torn basil leaves or rocket.

Crumble some feta cheese or goats cheese on top to turn this salad into a meal in itself.
