When Dale and I started COOK ten years ago, the mission was a simple one: to produce meals and puddings using the same ingredients and techniques that a good cook would use at home. This has not and will never change.

What has changed beyond all recognition is the food landscape of the UK. Back then the Farmers Markets and the Artisan food producers were still a curiosity. I worked everyday in our first shop in Farnham and was rarely asked about the provenance of ingredients or how we made a particular dish. That has all changed and is definately a change for the better.

If you care about good food, the situation has improved massively and the good news is that things should only get better. The more people learn, the more people realise that you can't fake or take short cuts with food.
