Tell Me More

  • With coconut milk, lemongrass and lime leaf, this is a tasty Thai version of a classic takeaway dish
  • The chicken breast is marinated overnight in Thai yellow paste, lime juice and fish sauce before cooking, so it’s full of flavour
  • Unmistakably Thai, but undeniably different … and a real change from a red, green or yellow curry

Try It With

  • For a hassle-free supper, just serve with some of our Jasmine Rice or on plain noodles
  • A great addition to a Thai buffet to sit alongside all those colourful curries. You’ll find some more Thai banquet additions here
  • It’s not at all spicy, but you can always add some thinly sliced chillis to give it a lift. But don’t be too heavy-handed or you’ll drown out the subtle fragrant flavours

How We Make It At Our Kitchen

We start by marinating chicken breast overnight in Thai yellow paste, fish sauce and lime juice. The satay sauce is made with cashew nut butter, ginger, garlic, lemongrass, coconut milk, lime leaf and coriander, which is cooked until the flavours develop and intensify. Finally it is garnished with green beans and toasted cashews, for some extra texture.
