When COOK Founder Ed took home a sample of our new Chocolate & Salted Caramel Vacherin, his seven year old son Ben polished-off a plateful and pronounced: “Dad, this HAS to go on the menu.” Possibly our finest pud ever.

We wanted to create a spectacular party dessert that the whole family would love. So we thought of all the most popular flavours and put them all together - obvious. The vacherin is made up of three layers of crisp meringue - two hazelnut and one chocolate. In between is cream and chocolate sauce. It's then coated with more cream, chocolate and salted caramel. Grand finale is dark chocolate shards. Practically perfect in every way.

Our indulgent, hand-prepared puddings are frozen and need defrosting for a minimum of 5 hours at room temperature (please check the pack)

Liz Dove has been our pudding maestro since the beginning of COOK, so there's not much she doesn't know about frozen puddings. These are her 3 golden rules:

  • Remove all packaging when frozen: Always take your pud out of its box and put it on your serving plate while it’s still frozen.
  • Serve at the correct temperature. Some puds are best served at room temperature. Others are best chilled (any cheesecake). Check the instructions on the packaging.
  • Slice with a hot knife. Dip your knife in hot water to get a lovely, smooth slice.

 

How We Make It At Our Kitchen

At our puddings kitchen, we make three different layers of meringue: chocolate, hazelnut and the traditional plain. These are layered up with cream, dark chocolate sauce, salted caramel and chocolate shards, transforming it into a magnificent meringue gateau!

What Is A Vacherin?

Vacherin is a French meringue gateau. It shares the same name as a very delicious French mountain cheese. Not entirely clear why they share the name!

AT COOK WE USE THE SAME INGREDIENTS YOU WOULD USE AT HOME.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract). Free Range Pasteurised Egg White contains: Thickener Guar Gum. Cooking Instructions

At our kitchen, we prepare food by hand using the same ingredients and techniques you would at home. We then freeze our meals at -35°C so it tastes freshly made when you cook it at home (no nasty additives or preservatives required). Most of our food can be heated from frozen (sometimes in minutes in your microwave). Check the instructions below.

DEFROST TO SERVE

Defrost Instructions:

FOR BEST RESULTS DEFROST IN THE FRIDGE AND EAT AS SOON AS YOU CAN. 1. It is very important to remove this dessert from all packaging and place on a serving dish whilst it's still frozen. You'll find it much easier to handle. 2. Defrost for 4-5 hours at room temperature or 10 hours in the fridge. 3. Eat as soon as possible once thawed. In the unlikely event of there being any leftovers, keep in the fridge and eat within 48 hours.
