  • British top rump beef, aged for at least 21 days, is braised for almost four hours, and about a glass of Merlot in every portion.

Try it with:

  • Celeriac mash. Fry small cubes of celeriac in oil for 5 mins, then add thyme and rosemary, cover with water and simmer for 25 minutes until soft. Drain and mash.
  • Some steamed asparagus spears, tenderstem or purple sprouting broccoli, kale or French beans all work wonderfully on the side.
  • Try roasting some shallots in the oven with a dressing of balsamic vinegar, sea salt, demerara sugar and olive oil. 180 degrees for 15 minutes and they're ready.

Stir regularly to avoid it sticking or burning, and you can add a splash of water during cooking if the sauce becomes too thick. Ensure it’s all piping hot before serving.
