Serve with rice (Jasmine rice is perfect) and garnish with fresh coriander and a wedge of lime. Simple.

How we make it:

Our satay vegetables contains a vibrant mix of vegetables. The red peppers and red onions are lightly stir-fried so they keep their crunch, and we also use broccoli and baby sweetcorn to add some colour and texture. To make the rich, aromatic but simple satay sauce, we begin by lightly frying garlic and ginger to allow them to release their aromatic flavours. We then add smooth cashew nut butter, dark brown sugar, lime juice and tamari and mix this really well whilst it simmers. The dish is garnished with whole cashew nuts.

Did you know: We decided to use cashews as we don’t want to have peanuts in our kitchen, and we’re so pleased as it adds a really unique twist to the dish. Our cashew butter is made especially for us by Meridian Foods using 100 % roasted cashew nuts.

AT COOK WE USE THE SAME INGREDIENTS YOU WOULD USE AT HOME.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).

Water, Red Peppers (12%), Cashew Butter (10%) [Nuts], Broccoli (12%), Baby Sweetcorn (12%), Red Onions (10%), Dark Brown Sugar, Cashew Nuts (4%), Ginger Puree, Garlic, Tamari [Soya], Rapeseed Oil, Lime Juice, Chilli Powder.

Ginger Puree contains: Ginger Puree, Acidity Regulator: Citric Acid. Tamari contains: Whole Soy Beans, Water, Sea Salt, Alcohol, Koji Seed (Aspergillus Oryzae).

Cooking/Serving Instructions

These cooking instructions are only a guide. Your appliance may have a personality of its own (or a different power rating). Please adjust accordingly.

Microwave:

Remove sleeve and pierce film lid. Cook on full power.

3 mins > stir & re-cover > 3 mins
Stir well before serving.

Oven:

Remove sleeve and pierce film lid. Place on a baking tray and cook in the centre of the oven.

Oven Settings

Fan 180°C, Electric 200°C, Gas Mark 6.
30-35 mins
Stir well before serving.

Defrost Instructions:

Should this product defrost, keep refrigerated and eat within 48 hours. Follow the microwave guidelines but cook for 2 mins, stir, 1 min.

Extra Warnings:

Steam may be released when removing film lid.
