- This is a version of the classic Italian spring stew Vignole
- Gluten free, dairy free and suitable for vegans, too
- There’s mustard, capers, red wine vinegar and vegetable stock in the sauce, lots of lovely spring greens, and it’s garnished with pickled red onions
Try it with:
- A classic addition is a poached egg on top
- You can try it with some toasted sourdough bread, topped with crumbled feta
- It also makes a wonderful accompaniment to fresh fish or grilled chicken
