  • A magnificent centrepiece that cooks from frozen.
  • The pheasant, duck and venison is all wild and comes from one of the UK’s most respected suppliers: Ben Rigby Game.
  • The shortcrust pasty is made from scratch by hand at the COOK Kitchen.

Try it With:

  • A go-to choice to accompany the rich winter spices and flavours is creamy mashed potato and winter greens, like our new Cavolo Nero with Rosemary.
  • While it’s by no means essential, you could try it with a simple red wine jus (there’s no shortage of ‘cheat’s versions’ online).
  • If you have some leftovers (which is unlikely!), it’s really good served cold – try it with a good chutney.

How We Make It

  • A rich mix of pheasant, duck and venison are slow cooked by our chefs in a mixture of port and wine.
  • We make a thick, hearty sauce with onions, garlic, crushed juniper, nutmeg, rosemary, thyme, brandy and chicken stock.
  • Then we add the slow-cooked game, before we wrap it in our own crumbly shortcrust pastry and top it with our homemade sweet and tangy cranberry sauce.
