How We Make It At Our Kitchen

Our pastry chefs whip crumbled goats cheese, egg yolk, double cream and chopped rosemary to create a light mousse. This goes onto little squares of French all-butter puff pastry before being topped with a sticky fig chutney flavoured with cinnamon, cloves and allspice.
