How We Make It At Our Kitchen

  • All-butter shortcrust pastry (made by our Pastry team), is rolled out and pressed into square cases before being blind-baked (to avoid a soggy bottom).
  • Once blind baked we add a layer of onions, cooked slowly in butter with garlic and salt, followed by a light egg mix.
  • The final layer is grated gruyere cheese and thyme – the gruyere melts beautifully giving the tart a golden glow.
