All our COOK turkeys are raised outdoors on a small farm in East Anglia with freedom to roam on a pasture or in woodland 24hrs a day with a 100% natural diet. This has been recognised with a Good Turkey Award from the charity Compassion in World Farming.

  • We use just the turkey crown, folded around our amazing, handmade stuffing of higher-welfare sausagemeat, orange-soaked apricots and a hint of ginger, and wrapped in sweet-cured bacon to keep the meat lovely and juicy.
  • Our frozen turkey crown needs defrosting before cooking. It takes a minimum of 48 hours to defrost in the fridge, or 12hrs at room temperature. Please refer to defrost instructions on pack.

How We Make It At Our Kitchen

  • Stuffing: Our chefs prepare their handmade stuffing with higher-welfare sausagemeat from Speldhurst butchers, orange-soaked apricots and a hint of ginger.
  • Sweet Cure Bacon: covering the crown in bacon ensures it’s really juicy. We use sweet-cure bacon, so that the turkey doesn’t become too salty, and the sugar in the cure caramelises during cooking to give a lovely golden glow.
  • Garnish: we’ve garnished with a slice of orange, a sprig of thyme and a bay leaf.

Ingredients

AT COOK WE USE THE SAME INGREDIENTS YOU WOULD USE AT HOME.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).

Turkey Crown (72%), Pork & Apricot Sausagemeat Stuffing (16%) (Pork, Water, Dried Apricot [Sulphites], Gluten Free Rusk (Dehydrated Potato Powder, Rice Flour, Salt, Dextrose), Onion [Sulphites], Ginger, Sage, Sugar, Salt, White Pepper, Basil, Parsley, Pimento, Mace, Orange Oil), Sweet-Cure Streaky Bacon (12%) (Pork, Salt, Dextrose, Preservatives (Potassium Nitrate, Sodium Nitrite, Sodium Acetate), Antioxidant (Sodium Ascorbate), Smoke), Orange Slices, Thyme, Bay Leaf.

Cooking/Serving Instructions

DEFROST BEFORE COOKING

Defrost Instructions:

Remove from packaging, place in dish and cover. Defrost for at least 48 hours in the fridge or 12 hours at room temperature. Ensure it is fully defrosted before cooking. Once defrosted, keep your turkey in the fridge.

OVEN COOK

Oven:

Preheat oven. Place in a roasting tin, cover with foil and cook in middle of oven for 100 mins. Remove the foil and continue to cook for further 20 mins to allow the bacon to crisp. Before removing from the oven, use a fork or skewer to pierce the centre of the meat, the juices need to run clear with no hint of redness. If they don’t, then pop it back in the oven for another 5 mins before checking again.

Oven Settings

Fan 170°C, Electric 190°C, Gas Mark 5.
120 mins
Ensure piping hot and allow to rest for 30 mins before carving. These cooking instructions are only a guide. Extra Warnings:

Please be aware that the bacon causes the turkey to turn pink, this is normal and does not mean that the turkey is not cooked. Although every care has been taken to remove all bones and apricot stone, some may remain.
