Drunken Thai Noodles

The winner of our Remarkable Recipe competition. Sweet, salty and fiery Thai flavours with tiger prawns, noodles, baby corn (and not a drop of booze.)
The name is a translation from Thai – Pad Kee Mao, where “Pad” means stir fry, and “kee mao” means someone in the habit of drinking. It’s a popular Thai street food dish, beloved of late night revellers on their way home after a skin-full, or even as a hangover cure.
Carla's original recipe was incredibly hot, including four times the amount of chilli we’ve used and a serious amount of green peppercorns – it literally blew your head off. Suffice to say - we've toned it down a fair bit!
Simply squeeze some fresh lime over the top for an extra zing and away you go...
