Chianti Chicken 
Our version of the Italian classic Pollo al Cacciatore, or hunter’s stew, is a perfect autumnal supper. It’s all about simple, bold Italian flavours combining to create an intense sauce of sun-dried tomatoes, black olives, cannellini beans and basil. The chicken, served on the bone for added tenderness and flavour, is marinated over night in Chianti, oasted to give it colour, then braised in the sauce.
Serve with
A simple salad and some polenta, pasta or creamy mashed potato.
