How We Make It

A dish comprising of a layer of tomato sauce with roasted red peppers; another of courgettes, spinach and oven-roasted mushrooms in a rich mascarpone and crème fraiche sauce, then with a classic but light cheese sauce and topping. We use Italian lasagne sheets for an authentic flavour.

To make the rich tomato sauce base for this lasagne, we slowly sweat onions, garlic, celery and carrot until they are soft and sweet. We add chopped tomatoes, tomato puree and vegetable stock, and allow this to simmer until all the flavours have developed. Some oven-roasted red peppers, parsley and basil are then stirred through.

We oven-roast courgettes and cup mushrooms with a sprinkling of thyme, before combining these with spinach, mascarpone cheese and crème fraiche.

Lastly, our chefs make a light cheese sauce using the classic white sauce recipe, stirring in grated mature Cheddar to give a delicious flavour. The lasagne is then assembled before being topped with more grated Cheddar and basil.
