Tell Me More

This meat-free dish is a delicious alternative to our meaty Chilli con Carne. We use veggie mince from soya protein, which has a great texture and looks very similar to the beef mince we use in our Chilli con Carne.  It's great served with rice and sprinkled with some roughly chopped coriander.

For our traditional chilli sauce, our Chefs begin by slowly sweating onions and garlic until they are soft and sweet. They then add a mix of spices including ground cumin and chilli flakes before allowing these spices to cook out in some chopped tomatoes. We then add a sprinkle of cocoa powder to give a richness and depth to the chilli, along with tomato puree and vegetable stock before simmering. We then stir through some chopped coriander to give freshness to the sauce. Finally, we stir a mix of red kidney beans and cannellini beans through the sauce, along with the veggie mince, some sweetcorn and sliced spring onions.

Serving Suggestion

Chilli is great with pretty much anything: put it in a wrap; on a jacket potato; stick a fried egg on top… Or, for a more traditional chilli, serve with rice, nachos, sour cream, guacamole, and tomato salsa. Go-to chilli garnishes are coriander, sliced chilli and wedges of fresh lime.
