How we make it

Halloumi slices are marinated in our own marinade of pesto, lemon and mint before being added to a bed of sweet roasted peppers and onions. The peppers are glazed with olive oil, balsamic vinegar and sugar, before being roasted with red onions for extra sweetness.

Serve with

A squeeze of lemon, a green salad with fresh mint, either of our new Focaccia, or our Roasted Mediterranean Vegetables.

For a very healthy alternative you could serve with courgette linguine (Lyndsay shows us how easy it is to make in the video below) and a salad; dress your salad simply with extra virgin olive oil and a light sprinkling of sea salt.

Ingredients

AT COOK WE USE THE SAME INGREDIENTS YOU WOULD USE AT HOME.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).

Halloumi [Milk] (52%), Red Peppers (14%), Yellow Peppers (14%), Red Onions (13%), Olive Oil Blend, Green Pesto [Milk], Balsamic Vinegar [Sulphites], Lemon Juice, Demerara Sugar, Mint, Salt.

Olive Oil Blend contains: Pomace Olive Oil, Sunflower Oil. Green Pesto contains: Basil Puree (Basil, Sunflower Oil, Salt), Sunflower Oil, Vegetarian Medium Hard Fat Cheese (Milk). Balsamic Vinegar contains: Wine Vinegar, Grape Must, Colour: Caramel, Antioxidant Potassium Metabisulphite.

Cooking/Serving Instructions

OVEN COOK FROM FROZEN

Oven:

Remove sleeve and film. Place on a baking tray in the top of the oven.

Oven Settings

Fan 180°C, Electric 200°C, Gas Mark 6.
20-25 mins
To serve, remove the halloumi and vegetables from the tray using a spoon or knife to prevent excess cooking liquid from transferring to your plate.

Defrost Instructions:

Should this product defrost, keep refrigerated and eat within 48 hours. Follow the oven guidelines but cook for 15 mins. Allow to rest for 5 mins before serving
