Lebanese Salad Suitable for Vegetarians

Giant couscous with roasted red peppers in a honey, mint and cumin dressing, topped with feta cheese.

How We Make It

To make our Lebanese salad, we begin by making a dressing from olive oil, red wine vinegar, Dijon mustard, honey, turmeric and ground cumin which we blend thoroughly to emulsify and combine the flavours. The sweet and sour dressing is then stirred through giant couscous, and it is all mixed together with chopped roasted red peppers and chickpeas. The salad is garnished with lots of mint and parsley to add freshness, and is topped with diced feta cheese.

Ingredients

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract). Cooking Instructions

At our kitchen, we prepare food by hand using the same ingredients and techniques you would at home. We then freeze our meals at -35°C so it tastes freshly made when you cook it at home (no nasty additives or preservatives required). Most of our food can be heated from frozen (sometimes in minutes in your microwave). Check the instructions below.

DEFROST TO SERVE

Defrost Instructions:

Defrost in the fridge for 24hrs. Before serving, stir well to mix the dressing through the salad evenly. (It will look its best if you remove the feta from the top before stirring and then replace to serve.) Keep refrigerated and eat within 48hrs.
