How We Make It

To make the base of this deliciously light pearl barley risotto, our Chefs begin by sweating chopped carrot, onion and garlic slowly in olive oil until the onions are soft and sweet. They then add white wine to the vegetable mix, and allow the white wine to reduce by half to remove any alcohol and leave just the flavour. The Chefs then stir in lemon juice and vegetable stock, along with chopped chives to add a freshness to the dish.

This risotto is made with pearl barley – this is barley with all the bran removed, giving the round, shiny grains a pearlescent white colour. It has a slight nutty flavour which works really well in the dish. The pearl barley is partially cooked by our Chefs to ensure that it is perfectly al dente when reheated by the customer. The dish is garnished with king prawns as well as leeks, which have been lightly sweated to add a fresh flavour to the dish.

Cooking/Serving Instructions

These cooking instructions are only a guide. Your appliance may have a personality of its own (or a different power rating). Please adjust accordingly.

Serves 1

Microwave:

Remove sleeve and pierce film lid. Cook on full power for 3 mins, stir, 3 mins 30 secs.

3 mins > stir gently & re-cover > 3 mins 30 secs
Allow to rest for 3 mins and stir well before serving.

Oven:

Preheat oven. Remove sleeve and pierce film lid. Place on a baking tray and cook in the centre of the oven.

Oven Settings

Fan 170°C, Electric 190°C, Gas Mark 5.
25-30 mins
Allow to rest for 3 mins and stir well before serving.

Defrost Instructions:

Should this product defrost, keep refrigerated and eat within 48 hours. Follow the microwave guidelines but cook for 2 mins, stir, 1 min 30 secs.

Extra Warnings:

Steam may be released when removing lid. Although every care has been taken to remove all shell, some may remain.
