How We Make It

Tender pieces of chicken are marinated at the COOK Kitchen in a classic North African spice mix (turmeric, cinnamon, ginger and harissa), before being roasted, sliced and added to a deeply spiced and fragrant sauce, made with onions, yoghurt, honey and harissa. Served with pieces of aubergine, diced and roasted with cumin, plump chickpeas and dried apricots.

What is Harissa?

Harissa paste is a fiery North African paste that is orangey-red in colour. It’s a mixture of peppers, dried red chillies, garlic, caraway seeds, ground cumin and coriander, tomato puree, salt and olive oil. Our Harissa also contains rose petals.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).

Cooking/Serving Instructions

COOK FROM FROZEN

Microwave:

Remove sleeve, pierce film. Place on microwavable plate. Cook on full power.

4 mins < stir gently & re-cover < 2 mins 30secs
Allow to stand for 1 min and ensure food is piping hot before serving.

Defrost Instructions:

Should this product defrost, keep refrigerated and eat within 48 hours. Follow the microwave guidelines but cook for 2 mins, stir, then cook for a further 1 min 30 secs. Stir well and ensure the food is piping hot before serving.

Extra Warnings:

Although every care has been taken to remove all bones, some may remain. Steam may be released when removing film lid.
