Marinated chicken breast pieces with pancetta and rosemary in a sherry and cream sauce, wrapped in all-butter, shortcrust pastry

How we make it

We marinate our chicken with rosemary and thyme before oven roasting it. It’s then added to a rich, creamy white sauce - our white sauce is a traditional white sauce made from milk, double cream and roast chicken stock but the addition of sherry and rosemary gives it an Italian twist. Pancetta lardons are fried until golden and mixed into the sauce along with sliced spring onions.

This pie is fully encased in all-butter shortcrust pastry made by our pastry team. It’s glazed with free-range egg yolk and finished with hand-crafted pastry leaves and one last sprinkle of rosemary and thyme.

Serve with

A fresh green salad, or creamy mash.

Ingredients

AT COOK WE USE THE SAME INGREDIENTS YOU WOULD USE AT HOME.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).

Chicken (24%), Strong Wheat Flour (14%), Butter (10%) [Milk], Semi Skimmed Milk, Smoked Pancetta Lardons (8%) [Wheat Gluten], Water, Sherry (6%) [Sulphites], Double Cream (5%) [Milk], Onions, Plain Wheat Flour, Free Range Pasteurised Egg Yolk (3%), Roast Chicken Stock, Spring Onions, Olive Oil Blend, Ham Stock, Thyme, Rosemary.

Olive Oil Blend contains: Pomace Olive Oil, Sunflower Oil. Smoked Pancetta Lardons contain: Pork Meat, Salt, Dextrose, Flavourings, Spice, Cure Mix (contains Preservative: Ascorbic Acid, Sodium Nitrite, Potassium Nitrate). Ham Stock contains: Ham, Rehydrated Potato, Salt, Sugar, Yeast Extract, Molasses Sugar, Smoke Flavouring, Lemon Juice Concentrate. Roast Chicken Stock contains: Roast Chicken, Maltodextrin, Salt, Natural Flavouring, Chicken Fat, Sugar, Lemon Juice (from concentrate), Onion Powder.

Oven:

Preheat oven. Remove from packaging onto the silicone paper on a baking tray in the top of the oven.

Oven Settings

Fan 170°C, Electric 190°C, Gas Mark 5.
75-80 mins
It is very important that this pie is left to stand for 15 mins before serving.

Extra Warnings:
