Moroccan One Pot 


with aubergines, chickpeas & couscous
A slow-cooked vegetable stew of aubergines, squash, chickpeas and couscous. 352 calories. Low in fat and saturated fat. Microwavable only.
We used the knowledge from our award-winning Moroccan Lamb Tagine and Harissa chicken for this recipe. All the classic north African spices and flavours are here: coriander, cumin, cinnamon,
chilli, honey, mint. The sauce is thickened naturally by the aubergine, apricots and tomato puree.
Although perfect for lunch (just keep a stash in the freezer and pop in your bag to take to work in the morning), the addition of some chopped coriander, natural yoghurt with mint and pitta bread would make it a more substantial and sophisticated supper.
NB: Our One Pots are microwave only.
