Liz Dove has been our pudding maestro since the beginning of COOK, so there's not much she doesn't know about frozen puddings. These are her 3 golden rules:

  • Remove all packaging when frozen: Always take your pud out of its box and put it on your serving plate while it’s still frozen.
  • Serve at the correct temperature. Some puds are best served at room temperature. Others are best chilled (any cheesecake). Check the instructions on the packaging.
  • Slice with a hot knife. Dip your knife in hot water to get a lovely, smooth slice.

How We Make It At Our Kitchen

The choux pastry is made in the traditional way and piped into a ring shape before baking. We then make two different, custard-based mousses - chocolate and toffee mousse. Once cool, we split the choux ring and fill it with a layer of chocolate mousse, then toffee mousse, and then whipped cream. It’s then topped with more toffee mousse, chocolate shards and a glamorous sprinkling of gold dust.

Ingredients

AT COOK WE USE THE SAME INGREDIENTS YOU WOULD USE AT HOME.

We never put additives or preservatives into our food. We do occasionally use kitchen cupboard ingredients that include some additives in their sub-ingredients (for example Worcestershire Sauce used in our Spaghetti Bolognese, which contains Tamarind Extract).

Whipping Cream (21%) [Milk], Water, Free Range Pasteurised Whole Egg, Whole Milk, Wheat Flour, Butter [Milk], Dark Chocolate (6%) [Soya, Milk], Soft Light Brown Sugar, Free Range Pasteurised Egg Yolk, Dark Chocolate Shavings [Soya, Milk], Soft Dark Brown Sugar, Beef Gelatine, Vanilla Flavouring, Edible Gold Dust.

Wheat Flour contains: Calcium Carbonate, Antioxidant: Ascorbic Acid. Dark Chocolate contains: Cocoa Mass 50 %, Sugar 49.5%, Emulsifier: Soya Lecithin, Natural Vanilla Flavouring. Soft Brown Sugar contains: Sugar & Molasses. Free Range Pasteurised Egg Yolk contains Acidity Regulator: Citric Acid, Potassium Sorbate. Vanilla contains: Mono-propylene Glycol, Flavourings, Vanilla Flavouring. Dark Chocolate Shavings contains: Sugar 49.5%, Cocoa Mass 43%, Cocoa Butter, Emulsifier: Soya Lecithin, Natural Vanilla Flavouring. Cooking/Serving Instructions

DEFROST TO SERVE

Defrost Instructions:

WE REALLY RECOMMEND DEFROSTING OVERNIGHT IN THE FRIDGE FOR BEST RESULTS. 1. It is very important to remove the dessert from all packaging and place on a serving dish whilst it’s still frozen. You’ll find it much easier to handle. 2. Defrost for 4-5 hours at room temperature or 10 hours in the fridge. 3. Eat as soon as possible once thawed. In the unlikely event of there being any leftovers, keep in the fridge and eat within 48 hours.
